BiBo, the cosmopolitan Spanish Andalusian Brasserie and Restaurant, by 3-star Michelin chef Dani Garcia, celebrates its first-ever brunch concept, starting October 8. BiBo Doha is located at Al Gassar Resort, the St. Regis Doha. Bibo brunch will be available henceforth every Friday from 12.30pm to 4pm. Bibo will be also opening its doors every Saturday, starting Saturday for lunch from 12.30pm to 4pm.
Chef Santiago said: “We have selected dishes that tell stories from different corners of the world, but with an Andalusian touch. We realised that most of our food is served from 6pm onwards, so we wanted to create this brunch concept for our guests to come together and enjoy our signature dishes. We wanted Saturday lunches to be more special as well, by opening our doors to the public.”
Bibo is mostly famous for its shareable platters. Guests will find on the menu the signature Guacamole and the seabass ceviche. The Rabo De Toro Brioche will also be served for brunch, alongside two of the top selling latest additions to the menu, which are the crispy eggplant, known as the Berenjenas Fritas and the creamy Canelones de Pollo.
Guests can select any of the four main courses: The Wagyu Burger, the slow cooked short ribs known as Costilla de Ternera, the Lubina Asada known as seared seabass or the Arroz Negro. The “dessert to share” section will include vanilla rice pudding and the caramelised soaked housemade brioche, the Torrija Caramelizado. For a more secluded dining experience, Bibo Doha offers guests private dining areas. Tables can be booked upon request in any of the private sections.
