The upscale Levantine restaurant is now open at Hilton Doha the Pearl Hotel & Residences and will be the "contemporary home of soulful Levant cuisine in Qatar", it has been announced.

Open daily for dinner from 6pm until midnight, Levantine’s menu -- which focuses on sharing and gathering -- results from a collaboration between the hotel’s own culinary team and Lebanese celebrity chef Joe Barza.

Guests have the option of eating indoors or outdoors amid the fragrant aromas of live, theatre-style cooking of Levantine favourites, including flash-charcoal-grilled spiced meats, seafood, fish and vegetables, spit-roasted lamb and chicken, and fresh bread baking, according to a press statement. The upscale Levantine lifestyle is also reflected with the terrace where signature Moroccan tea will be served to pay tribute to Maghreb traditions.

“In keeping with true Levantine traditions, this restaurant is the perfect setting for families and friends to get together at the end of a day or during the weekend and celebrate their connections over really good food and in great company,” said Hassan El Wahidi, the hotel’s general manager. With an environment that "mixes perfectly" with Arabian culture, Levantine offers a fine-dining experience with grilled meats and locally inspired handmade treats. Levantine’s menu is truly varied and features a range of traditional dishes from the Levant region with a creative twist. "Its Hummus Collection is expected to be a main attraction with four mouthwatering choices to suit all tastes: traditional hummus bi tahine, basil hummus with arugula pesto, pistachio hummus, and hummus bil lahmeh with chickpeas and lamb," the statement notes.

Other noteworthy menu selections include exquisite grilled catch of the day -- a fennel and lime preparation; grilled octopus – made from lemon jam and garlic; and grilled jumbo shrimps – a blend of red chilli paste, cumin and coriander and the roasted lamb leg, a great sharing option for 3-4 diners.

Guests can also savour the traditional Lebanese sausage, makanek, or opt for a range of fresh, vegetarian options before digging into a selection of the finest desserts, the statement adds.
